{Healthy} Key Lime Pie Brownies

These Key Lime brownies are so tasty, you won't even notice that they are healthy too!
Ingredients
  • ½ C melted coconut oil
  • 2 TB butter spread
  • 2 TB molasses
  • 2 C granulated Stevia
  • 3 eggs
  • 1 scoop vanilla protein powder
  • ¾ C oat flour
  • ¾ C coconut flour
  • 2½ tsp. baking powder
  • ½ tsp. salt
  • ½-3/4 C white chocolate chips
  • 1 (8 oz.) block of light cream cheese
  • ½ C granulated Stevia
  • 1 egg
  • 1 tsp. coconut extract
  • 1 tub light non-dairy whipped topping
  • 2 TB sugar free vanilla pudding
  • 1 package sugar free lime jello
Instructions
  1. In a medium size bowl mix the first five ingredients thoroughly. Add the protein powder, flours, baking powder, and salt and mix thoroughly. Stir in the white chocolate chips then spread batter evenly into a 9x13 prepared baking pan.
  2. Make the filling by beating together the cream cheese, Stevia, egg, and coconut extract. Use a spoon to create even stripes over the batter in the pan. Next, use a table knife to cut through the strips perpendicularly to create a swirl pattern until the filling is evenly dispersed.
  3. Bake @ 350 degrees for about 20 minutes, or until no longer wobbly on top.
  4. While the brownies are baking, mix the pudding and jello into the cool whip and stir vigorously. Let the mixture sit for 5 minutes then stir it again.
  5. After the brownies have baked and rested for about 3 minutes, spread the cool whip mixture evenly over the top.
  6. Let cool completely and then enjoy!
